Baby Potato /Baby Aloo

Big ones for big people and small ones for small people :-) , thats what sonu thinks. His dad brought a big bunch of baby potatoes, and to my surprise i could not find one single of it on my veggie rack. Those tiny potatoes were all gone for a big wash in washing machine ;-) ! Thank god , sonu doesn’t know to switch on the m/c yet.

Tip

Potatoes :  A powerhouse of nutrients. Potatoes offer an excellent source of potassium and Vitamin C, as well as being a source of iron and fiber.

Ingredients 

  • 4-5 Baby potatoes
  • 1 medium size onion cut into small pieces
  • 1 Tomato – cut into small pieces
  • a pinch of turmeric powder

For Tempering

  • 1 tspn mustard seeds
  • 1 tspn urad dal
  • 1 tspn jeera
  • 1 green chilly
  • 1 small piece ginger
  • a pinch of asafetida/hing ( is used to aid digestion, it is used as antibiotic and it keeps children healthy by protecting them from diseases)
  • 3-4 curry leaves

Method

Boil potatoes in cooker , peel the skin and keep aside

Heat oil in a pan, add mustard seeds, wait until it sputters, then add urad dal+ jeera + green chilly + ginger + asafetida+ curry leaves sauté it for 2-3 mins.

Add onion and sauté until they turn golden brown

Add tomatoes and sauté for another 2-3 mins

Add boiled potatoes + turmeric powder+ slat and mix well
