‘Mamma Finish!’ .Oh you dear mother ,please try out this recipe and i am sure your kid will coming running to you for an other serving. Carrots are such a sweet, delicious and crunchy vegetable. You make anything out of it,  IT WILL turn out to be a yummy dish.
This again is a shakuntala auntys (my sisters MIL) recipe for which she won the first prize in one of the cooking competition held in Mumbai.

 Carrots are the powerhouse of antioxidants.Just one carrot every day could help to keep you healthier than ever before.The high levels of beta-carotene present in carrot will help improve vision.

Ingredients:

  • 1 cup basmati rice
  • 4 cups of grated carrot
  • 1 inch cinnamon
  • 4-5 cloves
  • 2-3 cardamom
  • 1 tspn chilly powder
  • 2 tspn of lemon juice
  • 1 bay leaf
  • 2 tspn of butter
  • 1 tspn of oil
  • salt to taste

Method:

Clean and wash the rice thoroughly. Add rice + lemon juice + oil + bay leaf + water + salt in a cooker and let it soak for 20 mins.
After 20 mins , pressure cook for 2 whistles and keep aside.

In a thick bottom pan, heat the butter, add all the spices and saute for a minute.cr3 cr4

Then add chilly powder,saute for few seconds.cr5

Add grated carrot to this and saute for a while until the carrots are slightly cooked.cr6

Finally add the cooked rice to this and mix well.cr7 cr8 cr9 cr10
