Amrakhand – A popular variation of shrikhand, which is shrikhand blended with mango pulp.Mango Shrikand is a popular dessert in Maharashtrian and Gujarati cuisine and is usually served with Poori.Preparation of this dish is very simple but it takes some time to process yogurt.My husband is a big time fan of Shrikhand ! We usually buy out from the market, but this time I wanted to prepare this on my own to give it a Home-Made Tag :-) and also for the much appreciation from my hubby.

Ingredients:

  • 3/4 cup of Mango Pulp(any kind that is sweet)
  • 1.5 cups of Yogurt
  • 1/2 cup of sugar
  • 1/4 tsp of Cardamom powder
  • 2-3 strands of Saffron
  • Few pistachios or almonds to garnish

Method:

Place yogurt in a muslin cloth and hang it overnight  to drain out the whey from the yogurt.           Blend yogurt,mango pulp,sugar,cardomom powder to a smooth texture.                                                           Garnish with saffron and pistachios.Refrigerate for an hour and serve chilled.

Egg Curry

Egg burji , Boiled Egg, Omlette ….. what next ? Let’s try some egg curry this time! Do you know Eggs are good source of vitamin D ? An essential vitamin that most of us lack. A lack of vitamin D increases our risk for a range of conditions including brittle bones and cancer. Vitamin D supplementation is highly recommended by Pediatric associations for infants from birth onwards. As suggested by my ped , apart from the food sources i also give my toddler a vitamin D supplement.

Eggs are an extremely nutrient-dense food. Eggs are a good source of antioxidants lutein and zeaxanthin. Eggs are an important dietary source of choline, a nutrient required for normal cell function. Research suggests choline may be important in early brain development and memory function.

Ingredients:

  • 2 Eggs
  • 1/4 cup of grated coconut
  • 1/2 cup of onion ( cut in small pieces)
  • 1 tspn of coriander seeds
  • 1-2 dry red chilly
  • a pinch of tamarind
  • a pinch of turmeric
  • salt to taste

Method:

  • Hard boil the eggs and keep aside
  • Take a thick bottom pan, heat 2 tspn of oil and fry onion ( take 1/4 cup from the actual measure) + coriander seeds + red chilly for about 2-3 mins

  • Grind the above fried ingredients with coconut + tamarind to a fine paste
  • Add a little more oil to the same tava/pan and fry the remaining onion for about 2 mins

  • Add the ground paste to this and bring it to boil
  • Now add boiled eggs and boil for an other minute or so

“Sunday Ho Ya Monday, Roz Khao Ande” …. – courtesy NECC , i have been watching this ADD ever since my childhood. As a kid i loved the Yolks ! I used to give away the egg whites for yolks, to my siblings. And now i continue to do it with my son ,coz he just doesn’t like yolk. He says ‘White for me, Yellow for you’.

You ‘ll have to time it right for a perfect hard boiled egg ! Perfect hard boiled eggs will take somewhere between 15-17 mins.

  • Salt and pepper to taste

  • Add eggs to cold water, bring to boil until you see a crack on the shell ( takes approx 15- 17 mins)

  • Remove from heat and plunge the eggs into cold water as soon as they are done.Remove the shell, cut into two halves , sprinkle some salt and pepper and serve
