Egg burji , Boiled Egg, Omlette ….. what next ? Let’s try some egg curry this time! Do you know Eggs are good source of vitamin D ? An essential vitamin that most of us lack. A lack of vitamin D increases our risk for a range of conditions including brittle bones and cancer. Vitamin D supplementation is highly recommended by Pediatric associations for infants from birth onwards. As suggested by my ped , apart from the food sources i also give my toddler a vitamin D supplement.

Eggs are an extremely nutrient-dense food. Eggs are a good source of antioxidants lutein and zeaxanthin. Eggs are an important dietary source of choline, a nutrient required for normal cell function. Research suggests choline may be important in early brain development and memory function.

Ingredients:

  • 2 Eggs
  • 1/4 cup of grated coconut
  • 1/2 cup of onion ( cut in small pieces)
  • 1 tspn of coriander seeds
  • 1-2 dry red chilly
  • a pinch of tamarind
  • a pinch of turmeric
  • salt to taste

Method:

  • Hard boil the eggs and keep aside
  • Take a thick bottom pan, heat 2 tspn of oil and fry onion ( take 1/4 cup from the actual measure) + coriander seeds + red chilly for about 2-3 mins

  • Grind the above fried ingredients with coconut + tamarind to a fine paste
  • Add a little more oil to the same tava/pan and fry the remaining onion for about 2 mins

  • Add the ground paste to this and bring it to boil
  • Now add boiled eggs and boil for an other minute or so

Fruit Custard Dessert

Fruit Custard Dessert – It gets a little too boring for kids to eat fruits alone and they may not really empty the fruit bowl, try making it a delight by adding some custard to it. Kids will love this creamy texture on fruits and i am sure they will be come back for an other serving.

Ingredients:

  • Any kind / any number of fruits of your kids choice
  • Custard powder – any flavour ( I have used strawberry and Mango)
  • Milk
  • Few dry fruits ( raisins/cashews)

Method:

Making custard:

  • Take 4-5 tspn of milk from 500 ml milk, add 2 big spoons of custard powder to this and make a thin paste.
  • Bring the rest of the milk to boil and simmer it.
  • Add 4-5 tspn of sugar to the milk and stir it until it dissolves
  • Now add the custard paste to the milk and stir continuously for 2-3 mins / until it gets thicker
  • Allow it to cool

Fruit custard:

  •  Cut all the fruits and keep aside
  •  Cut all the dry fruits into small pieces and keep aside
  •  Once the custard cools down , mix all of the above and refrigerate it for 15- 20 mins and serve chilled

Lady Fish curry ( Nagli ambat in konkani)

Sea food has been an excellent source of nutrition. Fish contains high amount of proteins and other important nutrients. They are low in saturated fats and are good source of omega 3 essential fatty acids. However i am not too sure of the mercury levels! Few say , lady fish falls under the category of Fish that contains High mercury levels. But my granny says it is ‘THE FISH’ for kids! I am still learning about this. Will update my blog when i have more info on the same.

One can get the best Lady Fish @ Honnavar. My son goes Ummmmmmmmmhhhh Ummmmmmmhhhhhhhh when lady fish curry is around. He specially likes this konkani style curry ( yet another special recipe that I learnt from my MIL).

Ingredients:

  • 2-3 medium size Lady fish
  • 1/4 cup of grated coconut
  • 1 small size onion
  • 1-2 dry red chilly
  • 1 green chilly
  • 2-3 garlic clove
  • 1/2 tspn of coriander seeds
  • a small ball of tamarind
  • a pinch of turmeric
  • 3 tspn of coconut oil (Fish curry will be at its best with coconut oil)
  • salt to taste

Method: 

  • Marinade the fish with salt and turmeric for 15 mins, cut and clean thoroughly ,make few vertical slits all over and keep aside

  • Take a thick bottom kadai, add 2 tspn of coconut oil, fry red chilly + coriander seeds for about 2 mins, keep aside

  •  Grind all of the above ingredients (Expect onion and salt) along with roasted red chilly and coriander seed, to a fine paste

Grind all ingredients to make smooth paste

  •  To the same kadai , add a tspn of oil and fry onion until golden brown, add slit green chilli and fry for an other minute

  •   Add the ground paste and bring to boil , at this point add the fish and cook till the fish becomes opaque . Finally add salt as per taste
