Kids wouldn’t say NO to sweet corns, obviously because of its high sugar content, which makes you want to eat more. While i was thinking to make something out of sweet corn , i got this recipe from shakuntala aunty (my sisters MIL, an excellent cook). It came out so well at my first go, that now i make it so often.
Corn is a good source of phenolic flavonoid antioxidant, ferulic acid. Several research studies suggest that ferulic acid plays vital role in preventing cancers, aging, and inflammation in humans. Further, it contains healthy amounts of some important minerals like zinc, magnesium, copper, iron, and manganese.
- 1 cup sweet corn (boiled)
- 1/4 cup fried gram (huri kadle)
- 1 tspn ginger paste
- 1 tspn garlic paste
- 1 tspn of jeera
- 1 green chilly
- 1/4 bunch coriander leaves /cilantro leaves
- 1/4 cup rice flour (optional)
- bread crumbs for coating
- salt to taste
