Egg Bhurji

‘Sunday Ho Ya Monday, Roz Khao Ande’! @ home , if not Roz (everyday) , eggs will be part of our sundays English breakfast! which includes – Bread omlette/egg burji, pan cakes ,fruit juices…… and we do enjoy this breakfast. Childern like varieties, as Mom’s i think we should make sure that our kids get to eat variety of foods ,keeping in mind that the right nutrition is going in whatever he/she eats.

  • Helps protect eyes against damage due to ultraviolet radiation from the sun
  • Acts as multivitamin pill

Ingredients:

  • 1-2 eggs
  • 1 medium size onion
  • 1 tspn ginger grated
  • 1-2 flakes of garlic
  • 1 tspn pepper powder
  • 1 tspn jeera
  • a pinch of turmeric
  • 1 tspn urad dal
  • 1 tspn of mustard seeds
  • a small bunch of coriander leaves
  • 2-3 tspn of milk (optional)

Method:

Heat oil in a pan. Add mustard seeds, wait until it sputters.Add urad dal , sauté until golden brown. Then add jeera + ginger+ garlic ,sauté for few seconds

Add onion and sauté until golden brown

Add pepper powder + turmeric powder+ milk (milk makes the eggs fluffy).Add eggs and keep stirring until it is cooked

Garnish with coriander leaves
