This is one of my mother-in-laws special and one of all time favorite of my hubby. Now waiting to see if this tasty brinjal chutney gets listed out in my son’s favorite foods . This goes good with roti,dosa and chapati.
Brinjal is high in water content and potassium. Also contains good amounts of many essential B-complex groups of vitamins. These vitamins are essential in the sense that body requires them from external sources to replenish and required for fat, protein and carbohydrates metabolism.
- 2 medium sized Eggplant
- 1 cup grated coconut
- ½ cup onion
- 1 small green chilly
- Sugar and salt as per taste
Add the ground paste to brinjal mash and mix well (season it will little mustard if required).
