Eggplant/Brinjal /Aubergine Chutney / Vaigana Gojju in Konkani

This is one of my  mother-in-laws special and one of all time favorite of my hubby. Now waiting to see if this tasty brinjal chutney gets listed out in my son’s favorite foods :-) . This goes good with roti,dosa and chapati.

Tip

Brinjal is high in water content and potassium. Also contains good amounts of many essential B-complex groups of vitamins. These vitamins are essential in the sense that body requires them from external sources to replenish and required for fat, protein and carbohydrates metabolism.

Ingredients

  • 2 medium sized Eggplant
  • 1 cup grated coconut
  • ½ cup onion
  • 1 small green chilly
  • Sugar and salt as per taste

 

Method:

Peel and cut brinjal into small pieces and fry them in ghee/oil until it becomes translucent. Mash it and keep aside

Grind together onion + coconut+chilly+salt+sugar

Add the ground paste to brinjal mash and mix well (season it will little mustard if required).
