Pan Pole / Neer Dosa

A South Indian Crepe ! Neer meaning Water , it is called so because of its thin runny batter. Unlike other dosas, the consistency of batter is very thin and the batter need not be kept overnight for fermentation. It can be just ground and poured on tava.

  • 2 cups raw rice
  • 1/2 cup grated coconut
  • salt to taste

Soak rice for a minimum of 5-6 hrs and then drain out the water and grind it along with coconut to a very fine watery consistency (when pressed between fingers the mixture should not feel grainy).Add salt

Heat tava, Sprinkle a few drops of water ,the water should sizzle and evaporate away. This means the pan is hot enough to make dosas .Pour a ladle of batter and tilt the tava immediately so that the batter forms a uniform thin layer on the tava

When the batter is fully spread, spray a few drops of vegetable oil all over the dosa. Cook on medium-high until done.Three -fold it while on tava and then remove itpp
