Puran poli













‘Happy Ugadi’! Puran poli/Holige is the Ugadi special sweet that is prepared at home. My MIL is an expert in making this dish.I only helped her out with the filling. Today i felt very good making this myself , this is the first time i tried and it turned out to be super good :-) ! And thankfully i had my in-laws drop in for the tasting session. Got Shabashgiri (kudos) from everyone at home :-)


For filling

Holige-Puran poli hooran ingredients













  • 1/2 cup chana dal (gram dal)
  • 1/2 cup Toor dal
  • 1/2 cup grated coconut (optional)
  • 1 cup jaggery
  • 1/2 tsp cardamom powder
  • 1/4 tsp nutmeg powder
  • 4-5 tsp of cashew nut powder (optional)

Note : You can choose to have only Chana dal or only Toor dal. Here i have used both of them.

For Dough

  • 1 cup maida (all purpose flour)
  • 1/2 cup Atta (wheat flour)
  • a pinch of turmeric
  • milk for kneading (can use water also, i used milk as it makes the dough very soft)
  • Ghee for frying
  • 1/2 tspn salt and sugar

Note : Here again , you can choose to use only maida or only wheat flour. Here i have mixed the two.


Wash and pressure cook Chana dal+Toor dal (DO NOT OVERCOOK)

Meanwhile in a dough mixing bowl, add all the ingredients mentioned under ‘Dough making’

Knead well to make a soft dough

Cover it with wet muslin cloth and leave for an hour

Then divide the dough into equal portions and keep aside

Coming back to the filling : drain all the water and coarsely grind the dal along with grated coconut

In a thick bottom pan add the dal mixture + grated jaggery + cardamom powder + nutmeg powder + cashewnut powder and mix well

Cook, stirring continuously till the mixture becomes dry (If the mixture is very thin ,add rice flour for thickening)

Remove from heat , when it is still hot, smear your palm with ghee/oil and divide the mixture into equal portions and keep aside

Roll out one portion of the dough into a small circle.I use tetra pack cover to avoid sticking of the dough. (My MIL uses plantain leaf)

Place the filling in the center of the dough and  seal tightly as shown below

Place an other tetra pack over it and press gently.( I have a roti presser machine which does this job for me)

Using little ghee,Cook pooran poli on a tava (griddle), until both sides are golden brown

Serve hot with ghee and cold coconut milk extract
