Vegetable Paratha


This is an other version of stuffed chapathi. I used veggies today instead of Til-coconut combination.


To make soft dough:

  • 1 cup wheat flour
  • 1/2 cup curds or milk ( ran out of curds, so used milk)
  • a dollop of Butter(optional)
  • salt to taste

For filling:

Any vegetables of your choice, i used:

  • 1/4 cup carrot
  • 1/4 cup of beans
  • 1/4 cup of sweet corn
  • 1/4 cup of capsicum
  • 1/4 cup of potatoes
  • 1/4 cup of onion
  • a small bunch of coriander
  • 2 tspn of coriander powder
  • 2 tspn of jeera powder
  • 1 tspn of red chilly powder
  • small portion of butter


     Microwave all the vegetables for 5-6 mins. Keep aside                                                                                                                                                                                                                                                                                                  

                               Take a pan heat the butter and roast  coriander + jeera+chilli powder for just 20 secs.To this add onion and sauté until it turns golden brown. Then add all the vegetables and sauté for a min. Add salt + coriander leaves and stir well. Allow it to cool. Divide the filling into equal portions and keep aside                                     In a bowl add wheat flour + milk + butter + salt                             Knead it well to make soft dough and divide into equal portions  

Roll out one portion of the dough into a small circle                                    Place the prepared filling in the center of the dough and seal tightly

Roll out again into a bigger dimension with the help of a little flourVP1                                                                              Cook the paratha on a tava (griddle), using a little ghee until both sides are golden brown
